Whole Wheat Pancakes

1 1/4 c whole wheat flour
3 tsp baking powder
3 T. brown sugar
3/4 tsp. salt
2 or 3 beaten egg yolks
1 1/4 c. milk
3 T. oil or melted shortening
2 or 3 stiffly beaten egg whites(beaten to peaks)


Combine dry ingredients. Beat in egg yolks, milk, and oil. Fold the beaten egg whites into mixture. Bake on griddle until golden brown and bubbles form on top, then turn.
